My “OMG WTF was THAT!” Chilli Mustard
If you like your mustards, and you love your chilli, and you like both to make your eyes water and take your breath away … then you must try this.
5 Tablespoons of freshly (finely) cracked mustard seeds
2 Tablespoons of Dry Powdered Mustard (like Keens)
A teaspoon of salt
3 dried, freshly crushed chilli peppers (prairie fires are good for this, but any will do)
¼ cup of super-chilled water
¼ cup of super-chilled beer
In a sealable bowl, mix the dry ingredients together.
Pour in the water and beer at a very slow rate while whisking away.
Continue until the mixture is uniformly smooth.
Seal the bowl and keep in the coldest part of your fridge for at least two days. This will allow the heat of the mustard to truely develop and produces a truly unique flavour.
This will produce about ½ cup of
hot mustard. very
Should be able to keep for about a fortnight or so in a tightly covered jar or Tupperware condiment container.
