Easy-peasy hassle-free smoke flavouring

As much as I am a stickler for wanting to do things “right” and “from scratch” as much as possible … sometimes, you just don’t have a smoking hut or even one of them smoking BBQ setups.

Hell, even if you did, you probably wouldn’t have the time to sit there and set up a 3 day cold smoking of a bacon hock for your cabbage soup.

So, you need a cheat – something that will still give you that traditional Hickory and Mesquite or (now) Aussie Mountain Ash flavour your seeking.

Say hello to Liquid Smoke!

I know this is nothing new for the Americans who’ve had it for years, but it’s still relatively unheard of in Australia – and it’s a shame.

Tone’s is pretty widely distributed by Aztec to a great many delicatessens and Fine Food places, so should be easy to find at places like Leo’s or The Essential Ingredient.

USA Foods brings in a fine range of Colgin’s products and can be ordered online.

The new Misty Gully liquid smoke is a local product I have only recently become aware of, and can be ordered online.

You can expect to see this ingredient come up in future recipes, so consider this a heads up.

    I prefer more subtle smoke flavours and use Paperbark smoke oil and Bluegum smoke oil rather than the strong mesquite style liquid smokes.

    It’s just a preference but I’d recommend the two oils highly.
