My take on a Niçoise salad

Sometimes, a salad can be a meal on it’s own.

The Niçoise is a perfect combination that offers a mix of protein, fibre and carbs in a wonderfully satisfying bowl of refreshing and warming ingredients.

The quail eggs are so delicate and offer a light flavour that I find a delightful contrast against the heavy salt of the anchovies and the earthy flavours.

Ingredients:
[All listed as per person ratios]
  • 4 Quail eggs
  • 4 cherry tomatoes, cut into half and cured with Sea salt
  • 2 chat potatoes – boiled and quartered
  • 10 stringed bean-pods (I use a mix of French/green and butter beans)
  • 1/2 clove garlic, crushed
  • 1/2 capsicum, cut into thin matchsticks
  • 2 spring onions, white part only, trimmed, sliced diagonally
  • 1 small Lebanese cucumbers, peeled (optional), finely sliced
  • Torn lettuce, I use a mix of butter, endive and baby cos
  • 125g tuna in oil, drained well and hand-flaked
  • 4 anchovy fillets, drained well, cut lengthwise into 2-3cm pieces
  • 4 basil leaves
  • Olive Oil
  • Lemon juice
  • Tarragon or Apple Cider Vinegar

Directions:
Cooking:
  • Place the potatoes into a pan and boil – until a fork is easily inserted but it still holds shape – then was in cold water and quarter
  • Place a steamer basket with the beanpods onto the pan and steam pods till cooked but still firm – wash in cold water and pat dry
  • Prick the quail eggs with a pin, then cook in a saucepan of boiling water for ~7 minutes. Refresh under cold running water until cold. Shell and pat dry.
Preparation:
  • Place the tomatoes in a colander, then sprinkle with sea salt. Leave for 15-20 minutes. Gently pat dry with paper towel and set aside.
  • Rub a salad bowl or platter with garlic and season it lightly with salt and oil. 
  • Arrange the ingredients on the platter. (If using a bowl, I toss the ingredients gently – almost like giving them a massage). 
  • Sprinkle olive oil, lemon juice and vinegar to taste.
  • Gently tear the basil leaves and scatter over the salad.
